Rosé
Rosé is definitely one of the most loved and appeals to a wider range of consumer profiles. Known as Rosato in Italy and Rosado in Spain and Portugal, it surely evolved over the last years in Australia. Rosé is actually one of the oldest style of wine making and known for subtle impacting of color from the grape skins into the wine juice to give it a gorgeous, soft pink colour.
Rosé wine can be made from different grape varietals and grape preference in it usually depends on the climate, region and the wine-maker. Different grape varietals contribute to Rosé's different characteristics and flavours such as rose petal, rhubarb, strawberry or stone fruits.
As a lighter colour may indicate a dryer rosé, that is not always the case. Dryness of the rosé depends on many things, including how much skin contact has been given.
Another reason for rosé's popularity is its versatility when it comes to food pairing. A light, mineral and aromatic rosé carries herbaceous notes and grapefruit and strawberry flavour, would be perfect match for Provençal dishes like Niçoise salad, ratatouille, fresh cheeses and cured meats. Medium rosé with flavours and aromatics of cherry, hibiscus, raspberry, rose petals and white pepper enriches Mediterranean inspired dishes like herb grilled chicken, lamp roast, cold summer salads and grilled barbecued veggies. Lastly, full bodied and rich rosé would go great with pizza's and juicy burgers.
